According to "Statistics of livestock slaughter in municipal slaughterhouses, by state, 2006-2011" published by the National Institute of Statistics and Geography of Mexico (INEGI), throughout 2011 the number of animals slaughtered was 7.8 million, of which 58.9% were of swine, 37.7% were cattle, 2.2% sheep and the remaining 1.2% were goats.
Carcass output was 1,025,540 tons, an increase of 3.1% compared to 2010. Of the total, 68.1% was beef, 31.3% swine, 0.4% sheep and the remaining 0.2% goats. The increase in total meat production was due to the increase specifically of sheep meat, pork and beef by 8.5%, 4.3% and 2.6%, respectively.
Specifically for pork, throughout last year the production of pig carcasses was 321,157 tons, of which Jalisco contributed 16.9% of the total, 14.9% State of Mexico, 7.4%, Guanajuato 7.1% Puebla, 6.4% Michoacán de Ocampo, 6.2% Yucatán, 5.7%, Veracruz de Ignacio de la Llave 4.5% Queretaro, 3.7% Guerrero and Colima 3%. Together this group of entities contributed 75.8% of domestic pork production.
